Sherry casks for a new variation of the whisky from Thurso

With the Wolfburn Aurora the young distillery at the north coast of Scotland will enlarge its whisky range: they will further on offer two permanent expressions. The Wolfburn Single Malt Whisky, matured in refill quarter casks form Islay, which has been available so far, will stay on trade unchanged but wear the name Northland. Wolfburn Aurora (named after the Northern Lights Aurora Borealis), batched from 80% first fill ex-Bourbon casks and 20% Spanish Oloroso Sherry casks, will join it.

The new spirit for the Aurora is exactly the same as for all Wolfburn whiskies and is very aromatic, fruity and sweet because of an unusually long fermentations time (According to Distillery Manager Shane Fraser up to 90 hours). The share of Sherry casks provides the Aurora with additional aromatic depth and sweet notes of dried fruits. Shane Fraser’s tasting notes for the Wolfburn Aurora: “On the nose you’ll sense sherry sweetness accompanied by dried fruits and malt. On the palate there’s a warmth imparted from the sherry, augmented by autumn fruits and nutty flavours, with a hint of spice in the background – wonderfully smooth and mellow.”

Not limited but permanent expression

Inquiring if this Wolfburn Aurora will be a limited edition or be part of the permanent range we got the answer from Wolfburn that they started in 2013 filling Sherry casks. From then on they regularly filled Sherry casks and will do further – so Wolfburn Aurora will be a permanent expression. There will also be cask strength bottlings of Wolfburn Single Malt Whisky, but they will probably not be released before next year. This Wolfburn Aurora with its 46% ABV will be released this September. Bottling has already started!
