Macallan 15 Years Fine Oak
This 15 year old Macallan matured in three different cask types: Spanish Sherry casks, Sherry casks made out of American white oak and American Bourbon casks. This special combination makes the Single Malt very smooth and delicate, but still complex.

Substantially diminished over the years, a hint of "oiliness" at the front-palate is still present, carrying the honeyed cereal notes. The mid-palate immediately becomes more austere, with dry cereal qualities and noticeable, "chalky" and bitter oak tannins structuring the development. It finishes lean, with lingering, mildly spicy astringency and balanced "warming" alcohol sensation.
Water slightly emphasizes front-palate sweetness.
All aromas (earthy, cereal, heather) fade within seconds, while the bitter, drying structure on the palate lingers for minutes.
Sorry to say, this is what the "12Y Fine Oak" delivered 10 years ago. Obscene price for quality. Compare to Glenrothes "Select Reserve" at 1/3rd of the price.

Finish: cream,
Comment: Every edge is softened. Clearly distinguishable from The Macallan's traditional sherried nature. A sophisticated marriage between palate to finish. There is complexity in this whisky's scents and flavors, but never an abrupt transition from one facet to another.
